CREAM OF SPINACH SOUP

(serves 6)

Ingredients:
2 package frozen spinach
4 cups chicken broth
½ cup white onion, chopped
1 cup heavy cream
¼ cup dry sherry
1/8 teaspoon COLGIN WORCESTERSHIRE SAUCE
salt and pepper to taste

Instructions:
Cook spinach and drain. In large saucepan add broth, Worcestershire, onion, spinach, salt and pepper. Bring to boil and simmer on low heat 15-20 minutes. Pour 1/2 into blender and puree until smooth. Repeat with remaining spinach and return to saucepan. Add the remaining ingredients and simmer on low heat 5-10 minutes.
