SAUSAGE AND CHICKEN GUMBO

Number of Servings: 8-10

Ingredients:
1lb. smoked sausage, sliced
1lb. boiled chicken tenders
½ cup chopped green peppers
1 cup chopped white onions
3 cups sliced okra
1 tablespoon file (file is made from ground sassafras leaves)
1 teaspoon COLGIN WORCESTERSHIRE SAUCE
4 cups water
½ cup roux
2 tablespoon butter

ROUX = brown ½ cup oil + ½ cup flour in skillet on low heat until a brown color, do not over cook.

Instructions:
In large saucepan, add water, sausage, chicken, roux , orka and Worcestershire sauce. In skillet, cook onions and peppers in butter until done, add to sausage and chicken mixture. Cook on low heat 1-2 hours, add file before serving.
