SPICY PORK AND GRAPEFRUIT SALAD

Thinly slliced pork is cooked quickly combined with dressing and served on slices of grapefruit and spinach leaves.

Ingredients:
1 lb pork tenderlion sliced thin
2 grapefruits, peeled and sliced
1 teaspoon olive oil
1 teaspoon ground garlic
1 teaspoon ground chili powder
1 teaspoon ground oregano
1/4 teaspoon COLGIN NATURAL HICKORY LIQUID SMOKE
2 tablespoon sugar
¼ cup cilantro chopped
½ cup lime juice

Instructions:
Trim all fat from meat. Heat oil in skillet over medium heat. Add pork, garlic, smoke, chili powder and oregano. Cook stirring, until pork is no longer pink in center.
Add cilantro dressing; stir to loosen browned bits. Spoon hot pork mixture over grapefruit slices. Wash all fruit.

1/4 cup cilantro
1/2 cup lime juice
2 tablespoon sugar
