Ingredients:
2 cups dry black-eyed peas
3 cups water
2 (16oz.) chopped tomatoes
½ cup chopped white onion
2 ribs of chopped celery
3 teaspoon crushed garlic
¼ teaspoon ground ginger
¼ teaspoon cayenne pepper
1 tablespoon green chilies
1/8 tablespoon COLGIN NATURAL LIQUID SMOKE

Instructions:
Soak peas for 3 hours. Drain them, put the 3 cups of water in pot, and add peas. Add the tomatoes, onion, celery, garlic, ginger, cayenne pepper, green chilies, and liquid smoke. Bring to boil, cover and cook on low heat until done. Takes about 2 hours. Can be served over rice.
