ENCHILADA STACKS

serves 4

8 blue corn tortillas
2 cans enchilada sauce
1/2 cup chopped green onions
1 4oz. can green chilies, drained
1 cup white cheddar cheese
2 tbs. cilantro
1-2 drops Colgin Apple Liquid Smoke
salt and pepper to taste
sour cream

Place 4 tortillas in baking dish. Heat enchilada sauce in saucepan. Add chilies, salt,
pepper and liquid smoke to sauce. Simmer on low heat 4-5 minutes. Pour part of sauce over tortillas. Top with cheese and green onions. Add the other 4 tortillas and pour remaining sauce over tortillas. Bake in oven at 350 degrees for 10-15 minutes. Top with sour cream and cilantro.
