SMOKE CHICKEN & RICE SOUP

serves 6

Ingredients:
3 boneless, skinless chicken breast, cubed
2 cups chicken broth
4 cups water
1 cup chopped white onion
2 cups sliced carrots
2 cups chopped tomatoes
1 avocado,peeled and cubed
1/2 teaspoon basil
2 cup cooked white rice
1/2 cup shredded Monterey Jack cheese
1/8 teaspoon COLGIN NATURAL APPLE LIQUID SMOKE
3 tablespoons lemon juice

Instructions:
In saucepan over medium heat, bring the water, broth, smoke, onions and carrots to boil. Reduce the heat and simmer for 10-12 minutes. Add the chicken and simmer 10-15 minutes or until chicken is done. Stir in the rice, avocados, tomatoes, lemon juice and basil. Heat 2-5 minutes. Ladle into bowls and top with cheese.
