AMANDA’s CORNBREAD SALAD

Number of Servings: 10-12

Ingredients:
2 boxes Jiffy cornbread mix
¼ cup mayonnise
1 medium tomatoe, chopped
¼ cup cucumber dressing
½ cup chopped, white onions
½ cup bacon bits
½ cup chopped, celery
salt & pepper to taste
½ cup kernel, corn
1/8 teaspoon COLGIN NATURAL PECAN LIQUID SMOKE
½ cup Salad Toppings, garden vegetables
½ cup cucumber, chopped, no seed

Instructions:
Cook cornbread as directed on box, add the smoke to cornbread mixture, and bake. Let cornbread cool, then crumble into large bowl. Combine dressing and mayonnise in cup. Add vegetables, bacon bits & salad toppings to cornbread. Mix well, add dressing & mayonnise to cornbread, toss to mix dressing with cornbread.
