BEAN and HOMINY CASSEROLE

serves 8

1- [14oz.] can hominy,drained
1- [14oz.] can pinto beans,drained
1- [14oz.] can chopped tomatoes
4 oz. green chilies
1 cup chopped onion
1 cup shredded cheese
4 tortillas, cut into strips
1/2 cup bacon bits
2 tbs. butter
1-2 drops Colgin Apple Liquid Smoke
salt and pepper to taste

In skillet melt butter, add onions and simmer
2-3 minutes. Add beans,hominy, liquid smoke,
chilies salt and pepper. Simmer on low heat 5-10 minutes. Transfer to baking dish. Combine cheese and bacon bits and spread over casserole. Sprinkle torilla chips over cheese.
Bake in oven at 350 degrees for 25-35 minutes.
