BACON AND SPINACH QUICHE

serves 6

1 cup shredded Monterey Jack cheese
1 cup chopped cream spinach, thawed and drained
1/2 cup sliced mushrooms
4 eggs, beaten
1 cup half-half
6 sliced bacon,cooked, broken in pieces
1-2 drops Colgin Apple Liquid Smoke
salt and pepper to taste

Combine eggs,milk,liquid smoke,1/2 cup cheese,salt and pepper in bowl. Mix well.
Layer the bacon on bottom of baking dish.
Top with mushrooms, then spinach. Pour eggs
over the top of spinach. Add the remaining
cheese. Bake in oven at 350 for 40-60 minutes.
