SMOKIN’ MACARONI AND CHEESE

serves 6

1[8oz.] package penne pasta
4 tbs. butter
2 tbs. flour
1 cup milk
1[12oz.]can evaporated milk
2 cups [8oz.] shredded smoked Gouda cheese
1[3oz.] package cream cheese,softened
2 tbs. Colgin Liquid Smoke
3/4 tsp. salt
1/2 tsp. ground red pepper,divided
1 [8oz.]packed cooked,chopped ham
2 cups cornflakes,crushed

Preheat oven to 350. Cook pasta according to
package directions. Drain. Transfer pasta to
large bowl. Melt 2 tbs. butter in a medium
saucepan over medium heat. Gradually whisk in
flour until smooth;cook,whisking constantly,1
minute. Gradually whisk in milk and evaporated
milk; cook, whisking constantly,3-5 minutes
until thickened. Whisk in shredded Gouda cheese, cream cheese,salt, Colgin Liquid Smoke
and 1/4 tsp. red pepper until smooth. Remove
from heat and stir in ham. Combine pasta and
cheese mixture; pour into lightly greased
13×9 backing dish. Stir together 2 cups cornflakes crumbs, 2 tbs.butter and remaining
red pepper. Sprinkle over pasta mixture.
Bake in oven at 350 degrees for 30 minutes
until golden and bubbly. Let stand 5 minutes
before serving.
