RED BEANS AND RICE

Ingredients:

3 or 4 hocks or a ham bone
1 chopped onion
Seasoned water
1 can of stewed tomatoes, chopped
1 teaspoon Colgin NATURAL LIQUID SMOKE
Red beans that have been soaked over night in water
salt
sugar
rice

OPTIONAL:
Cayenne
A bit more sugar
Finely chopped, fresh parsley
Diced, sweet onion
Crumbled, crispy bacon
Chopped remains of the ham or hock meat

Instructions:
Boil 3 or 4 hocks – or a ham bone with chopped onion in
seasoned water for 1/2 hour. Add red beans that have been soaked over night in water containing salt and sugar. Dump the soaking water. Cook the rice of your choice according to package directions. When the beans are soft and the liquid reduced, drain a can of stewed tomatoes, chop and add with rice. Pour in 1 teaspoon of liquid smoke or more to your taste (taste first of course).

OTHER ADDITIONALS:
Cayenne is a common seasoning for this dish
A bit more sugar to marry the flavors
Finely chopped, fresh parsley
Diced, sweet onion
Crumbled, crispy bacon
Chopped remains of the ham or hock meat
Add liquid smoke for a rustic taste
