INGREDIENTS:
8 lb. beef or caribou round flank steak
2 teaspoon cayenne pepper
6 teaspoon salt
2 tablespoon COLGIN NATURAL HICKORY LIQUID SMOKE
4 teaspoon pepper
1 cup water
4 teaspoon chili powder
¾ cup soy sauce
4 teaspoon garlic powder
½ cup COLGIN WORCESTERSHIRE SAUCE
4 teaspoon onion powder

INSTRUCTIONS:
Trim all fat off the meat and cut into ¼" thick strips. Mix all ingredients together in a bowl. Add the meat and cover. Marinade overnight. Remove from marinade and let dry on a rack. Line a cookie sheet with foil and arrange meat on it in a singel layer. Dry for 6 or more hours at 175°F, turning after 3 hours. Cool and bag it.
