CANDIED SWEET POTATOES

serves 8

2 lbs sweet potatoes
2 tbs. brown sugar
1/4 cup heavy cream
1/4 cup sugar
1 egg,beaten
1/2 tsp. nutmeg
1/2 tsp. grated orange rind
1/4 tsp. cinnamon
3 tbs.butter
4 tbs. red wine
1/8 tsp.Colgin Pecan Liquid smoke
1 cup chopped pecans

Cook the potatoes in boiling water for 20-30 minutes. Slip off the skins and mash potatoes.
Add the nutmeg,orange rind,cinnamon,pecans,
wine,pecan smoke,cream,sugar,egg and 1 tbs butter.Transfer to baking dish.Top with melted
butter and brown sugar. Heat oven to 450 degrees and bake for 30-40 minutes.
