Chilled Sun-Dried Tomato Bisque

serves 4

2 cups water
2 cups V-8 juice
½ medium onion
½ teaspoon ground garlic
1 teaspoon dried dill
¼ teaspoon pepper
2 oz. sliced sun-dried tomatoes
1/8 tsp.Colgin Liquid Smoke
½ cup skim milk

Instructions:
Bring 2 cups of water to a boil in saucepan: add tomatoes. Cover, reduce heat, and simmer 3-5 minutes. Drain water off. Cover tomatoes with cool water. Soak for about 5 minutes, drain. Put tomatoes, 1 cup juice, onion, garlic, dill weed, pepper, and smoke in blender; process until smooth. Add remaining cup of V-8 juice and milk, process until blended. Chill thouroughly overnight.
