OVEN OR GRILL BAKED BBQ BEANS

serves 8

2 pounds small white beans pre-soaked overnight, add salt and cook until tender and drain, or 10 to 12 cans white beans drained.

2 cups catsup
1 cup mustard
1 cup brown sugar
½ cup molasses
½ cup coffee
1 cup cider vinegar
¼ cup Colgin liquid smoke
4 cups ham in 1″ dice
4 onions diced
3 tablespoons curry powder
1 teaspoon cayenne pepper
1 tablespoon granulated garlic
Salt to taste
Water as needed

Instructions:
While the beans are cooking, saute the onions until transparent, cook the diced ham until crisp, and then mix everything together in a large ovenproof pot.
Bake in the oven at 350F for 1 and ½ hours until the top has browned and formed a crust. Cook them for several hours along with the meat, stirring occasionally so that they absorb some of the smoke flavor from the cooking. If they get too dry, add some water.
