SPANISH SAUCE

Number of Servings: makes 2 cups

Ingredients:
1 cup chopped onions
2 and ½ cups tomato juice
½ cup chopped green pepper
4 tablespoons butter
1 bay leaf
1 teaspoon cloves
1 teaspoon sugar
¼ teaspoon COLGIN NATURAL HICKORY LIQUID SMOKE
4 tablespoons flour
¼ cup water
salt and pepper to taste

Instructions:
Combine water and flour to make a thick paste. In skillet melt butter and saute onions and peppers until tender. Add the remaining ingredients, but the water and flour. Cover and simmer 20-30 minutes. Add the flour and water to sauce, remove bay leaf. Simmer 5 minutes. Serve over meatloaf, hamburgers or fish.
