BAKED CHICKEN BREAST WITH MUSHROOMS

Number of Servings: serves 4

Ingredients:
4 chicken breast, boned and skinned
4 eggs, beaten
1 cup Italian bread crumbs
½ lb. mushrooms, sliced
1 cup chicken broth
4 oz. Parmesan cheese
6 tablespoons butter
½ tablespoon COLGIN NATURAL MESQUITE LIQUID SMOKE
salt and pepper to taste

Instructions:
In large bowl combine eggs, smoke, salt and pepper. Add chicken breast; marinate 1 hour. Roll chicken in bread crumbs. Melt butter in skillet and brown chicken breast. Transfer to baking dish. Add mushrooms to top of chicken and pour chicken broth over. Top with cheese and bake in oven at 325F for 30 minutes.
