Ingredients:
2 pints fresh oysters
1 (16oz.) can italian chopped tomatoes
1 (8oz.) can tomato sauce
1/3 cup chopped parsley
2 teaspoon garlic powder
½ teaspoon basil
½ teaspoon oregano
½ teaspoon cracked pepper
¼ teaspoon salt
½ teaspoon COLGIN NATURAL HICKORY LIQUID SMOKE
½ teaspoon cilantro
1 tablespoon olive oil
juice from oysters
4 cups cooked spaghetti ( 8 oz. uncooked)
½ cup grated cheese
¼ cup dry sherry

Instructions:
In saucepan combine tomatos, tomato sauce, oil, garlic, basil, oregano, smoke, salt and pepper bring to boil, simmer for 30 minutes when sauce thickens add the oysters and cook for 5 minutes, add sherry, in another saucepan cook spaghetti until done, drain and run under cold water, put on 4 plates and cover with sauce, top with grated cheese. Sauce could be prepared the day before.
