SWEET POTATO PUDDING

Ingredients:
1 cup sweet potato cooked; mashed
¼ cup dark brown sugar
½ teaspoon cinnamon
½ teaspoon allspice
1/8 tsp. COLGIN NATURAL PECAN LIQUID SMOKE
½ teaspoon grated orange rind
1 can evaporated milk
2 eggs beaten
cooking spray
Instructions:
Spray a quart-baking dish with vegetable oil; combine potato, eggs, sugar, orange rind and spices. Mix well, slowly add milk and mix, pour into pan and bake on 300F for about 1 hour. Serve hot. You can add pecans or marshmellows on top as an extra.
