Ingredients:
2 lbs. low-fat pork sausage
6 cups of beef broth
1 large (28oz.) can tomatoes, chopped.
1 chopped green pepper
2 zucchinis cut into slices
2 cups pasta shell or bowtie
½ cup celery
1 ½ cups red wine
2 chopped onions
2 teaspoon ground garlic
1 tsp. COLGIN NATURAL LIQUID SMOKE
1 tablespoon basil
1 teaspoon oregano
¼ teaspoon ginger
salt & pepper to taste
½ cup water

Instructions:
In soup pot add 1 cup beef broth, onions, peppers & celery. Bring to a boil, simmer until vegetables are done & brown. Stir in sausage, brown; add ½ cup water. When sausage is done, add the tomatoes, zucchini, spices & smoke, and simmer for 5 minutes. Add the 5 cups of broth, wine, and pasta. Cover pot and simmer until done. Garnish with cilantro.
