JALAPENOS WITH CRABMEAT

Ingredients:
1 large can whole jalapenos
1 lb crabmeat
¼ cup bread crumbs
1 egg, beaten
1/8 teaspoon cayenne pepper
¼ teaspoon COLGIN NATURAL PECAN LIQUID SMOKE

Instructions:
Cut pepper in half lengthwise. Discard pulp and seeds, rinse peppers. In large bowl, combine remaining ingredients. Stuff pepper halves with crab mixture. Set pepper aside.

Bread Mixture Ingredients:
2 cups bread crumbs
1 cup milk
2 eggs, beaten

Bread Instructions:
Combine eggs and milk, pour bread crumbs into flat pan. Dip peppers into egg mixture,then into bread crumbs. Repeat procedure. Deep fry at 350F until brown. Drain on paper towels.
