YELLOW SQUASH CASSEROLE

Ingredients:
2lbs. yellow squash, sliced
½ cup chopped onion
¾ cup water
¾ cups shredded Cheddar cheese
½ cup mayonnise
¼ cup chopped yellow pepper
1 egg, beaten
2 teaspoon sugar
½ cup chopped pecans
¼ teaspoon COLGIN NATURAL PECAN LIQUID SMOKE
½ cup cracker crumbs
1 tablespoon butter, melted

Instructions:
Combine water, squash, and onions in a saucepan. Bring to boil; reduce heat, and simmer 5-10 minutes. Drain off water and mash squash and onions. Add cheese to squash and the remaining ingredients except cracker crumbs and butter, stirring well. Pour into 9"x 12" baking dish. Add cracker crumbs to butter and sprinkle over casserole. Bake at 300F for about 30 minutes.
