VEGETABLE PANCAKES

Number of Servings: 12 pancakes

Ingredients:
1 cup carrots, grated
½ cup zucchini, grated
2 scallions, sliced
½ cup flour
½ teaspoon baking powder
1 egg, beaten
½ cup milk
2 tablespoon peanut oil or more if needed
1/8 teaspoon COLGIN NATURAL APPLE LIQUID SMOKE
salt and pepper to taste

Instructions:
Combine flour, baking powder, salt and pepper. Beat together egg, milk, smoke, carrots, zucchini and scallions. Stir wet ingredients into dry until combined. In large frying pan, heat oil over medium heat. Pour batter using tablespoon into hot oil, making a few pancakes at a time. Cook about 2 minutes on each side.
