CORN CASSEROLE

Number of Servings: serves 10

Ingredients:
1 (14 oz.) can cream-style corn
1 cup chopped tomatoes
2 cup Monterey Jack cheese
1 cup chopped ham
1 cup yellow corn meal
½ cup chopped green pepper
½ cup chopped white onion
½ cup chopped celery
2 eggs, beaten
1 cup half and half
1/8 teaspoon COLGIN’S NATURAL PECAN LIQUID SMOKE
salt and pepper to taste

Instructions:
In large bowl combine corn, tomatoes, ham, corn meal, green pepper, onions, celery, liquid smoke, 1 cup cheese, salt and pepper. Refrigerate over night. Next day add eggs and half and half, transfer to casserole dish. Bake in oven at 350F for 1 hour. Top with remaining cheese and return to oven for 5-10 minutes.
