MEXICAN GAZPACHO

Ingredients:
1 cup canned whole kernel corn
1 cup chopped zucchini
1 cup halved cherry tomatoes
½ cup green onions
½ teaspoon ground garlic
2 tablespoon lime juice
1 tablespoon chopped cilantro
2 cups spicy-hot vegetable juice
¼ teaspoon COLGIN NATURAL HICKORY LIQUID SMOKE
salt and pepper to taste

Instructions:
In food processor, add tomatoes, zucchini, onions. Process until vegetables are coarsely chopped. Transfer to large glass bowl. Stir in corn, smoke, garlic, lime juice, vegetable juice, cilantro, salt and pepper. Cover and reftigerate until cold. Serve chilled.
