Ingredients:
3 cups peeled eggplant
1 cup sliced mushrooms
½ cup yellow squash, julienne-cut
½ cup zucchini, julienne-cut
½ cup red bell pepper, julienne-cut
1 cup chopped red onion
2 cups peeled, chopped tomatos
¼ cup tomato sauce
¼ cup red wine or sherry
1 tablespoon flour
1 ½ teaspoon basil
1 ½ teaspoon oregano
2 teaspoon powder garlic
¼ cup parsley
1 teaspoon COLGIN NATURAL HICKORY LIQUID SMOKE
¼ cup parmesan cheese
salt and pepper to taste
4 cups hot cooked noodles

Instructions:
In a dutch oven with, cooking spray place over medium heat. Add the onions, and saute until tender. Add bell pepper and garlic; saute 2 minutes. Add eggplant, mushrooms, zucchini and squash; cook until done, stirring constantly. Sprinkle with flour; cook 1 minute, stirring constantly. Add tomatos,spices,wine, tomato sauce and smoke; cook until thoroughly heated. Serve sauce over hot noodles, and sprinkle with cheese. Wash all fresh fruit and vegetables.
