This is a nice combination of 4 powerfoods: onions, collards, yams, and black-eyed peas. Heavy on iron, calcium, fiber, antioxidants, and many good phytochemicals.
1 teaspoon olive oil (or 1/4 cup bouillon, stock, or wine)
1 large red onion (or 2 small) slivered
4 cups (packed) chopped collards
2 cups diced yams, unpeeled if organic
2 cups cooked black-eyed peas (frozen or canned is fine)
2 cups water
1 teaspoon black pepper
1 teaspoon salt
1/2 teaspoon Colgin NATURAL LIQUID SMOKE
Heat oil in large pot. Saute onions until slightly browned, about 8 minutes. Add remaining ingredients, bring to a simmer and cook, covered, about 20 minutes, the last 5 remove the lid to help reduce liquid. Let sit 10 minutes (it will further thicken, optionally, add a little cornmeal to thicken). Add additional salt and pepper to taste. Freezes well.
