BEEF AND TOMATOE SAUCE

Number of Servings: 6-8

Ingredients:
1 lb. ground chuck
1 teaspoon oregano
2 (8oz.) cans tomatoe sauce
1 teaspoon groung garlic
½ cup chopped white onion
1 teaspoon basil
½ cup chopped celery
½ teaspoon sugar
½ cup chopped green pepper
½ teaspoon COLGIN NATURAL HICKORY LIQUID SMOKE
3 tablespoon butter
¼ cup dry sherry
1 (3oz.) can tomatoe paste

Instructions:
In large stainless steel skillet, melt butter and add onions, celery and green peppers, cook until done. Add tomatoe paste and brown, about 3 minutes. Add tomatoe sauce, garlic, basil, oregano, sugar, sherry and smoke. In another skillet add ground meat and cook until done. Combine the meat with the sauce and simmer on low heat for 1 hour. This sauce is better if cooked the day before you serve it.
