ROASTED CHICKEN

Number of Servings: 4

INGREDIENTS:
1 (3lb.) chicken, cut into 4 pieces
1/2 cup olive oil
1/2 teaspoon COLGIN NATURAL MESQUITE LIQUID SMOKE
1 cup mushroom sauce, see sauce recipes

Herbs:
1/2 teaspoon thyme
2 tablespoon rosemary
1/2 teaspoon garlic powder
1/2 teaspoon oregano

Mushroom Sauce: Makes 2 cups
¾lbs. white mushrooms
1 cup chicken broth
2 teaspoon butter
1 teaspoon cilantro, chopped
½ teaspoon garlic powder
1 tablespoon flour
¼ teaspoon COLGIN NATURAL APPLE LIQUID SMOKE
¼ cup dry sherry
1/8 teaspoon marjoram

INSTRUCTIONS:
Combine, olive oil, smoke and herbs together, rub under skin of chicken and on top of chicken. Place chicken on roast rack pan and cover with foil. Bake at 350F for about 1-2 hours or until chicken is done. Serve with mushroom sauce.
