ASPARAGUS AU GRATIN

Ingredients:
36, steamed asparagus spears
½ cup shedded Parmesan cheese
½ cup shedded cheddar cheese
1 and ½ cups chicken broth
½ cup heavy cream
¼ cup flour
4 tablespoon butter
¼ teaspoon COLGIN NATURAL APPLE LIQUID SMOKE
¼ cup sherry

Instructions:
In saucepan melt butter, add the flour and stir with whisk until blended. In another saucepan, bring the chicken broth, smoke and cream to a boil, add to the flour mixture, stirring with the whisk until sauce is thickened and smooth. Add the Parmesan, cheddar, sherry, salt and pepper to the sauce, stir until cheese has melted. In a buttered casserole dish place a layer of asparagus top with a layer of sauce, repeat layers, ending with sauce. Top with additional Parmesan cheese. Bake in oven at 400F for about 5 minutes.
