MUSHROOM PIE

Ingredients:
1 lb. white mushrooms, sliced
(2) 8-inch pastry crust
4 tablespoon butter
½ cup chopped onion
1 tablespoon chopped chives
4 tablespoon butter
1 tablespoon flour
½ teaspoon COLGIN NATURAL HICKORY LIQUID SMOKE
¼ cup dry sherry
½ cup heavy cream
salt and pepper to taste

Instructions:
Preheat oven to 450F, bake 1 pie crust for 10-12 minutes. In lagre skillet melt butter and saute onions. Add mushrooms , simmer about 5 minutes. Add flour, cream, chives and smoke, bring to a boil. Stir in sherry, salt and pepper. Let cool. Pour into baked pie shell. Using a pastry knife cut the other pie shell into strips ½ inch wide. Arrange the strips of pastry over the top in lattice fashion. Brush top with melted butter and bake about 15-20 minutes.
