PEARS IN RED WINE

serves 8

Ingredients:
8 firm pears, peeled
2 cups red wine
2 cups water
3 tablespoons lime juice
2 cinnamon sticks
1 teaspoon allspice
1 and ½ cups brown sugar
1/8 teaspoon COLGIN NATURAL APPLE LIQUID SMOKE

Instructions:
Combine sugar, water, wine, smoke, cinnamon, allspice and 1 tablespoon lime juice in a large saucepan. Stir on low heat until sugar dissolves; increase heat and bring to boil. Add the remaining lime juice to pears and toss. Add pears to wine mixture; cover and simmer 8-10 minutes. Remove pears and bring sauce to boil. Cook until sauce is reduced to about half. Pour sauce over pears.
