10 pounds of brisket
One (4oz.) bottle COLGIN NATURAL HICKORY LIQUID SMOKE
Onion Salt, Garlic Powder, and celery salt
1 bottle Barbecue Sauce
use at least 3 teaspoons of spices, or more to your taste.
Place Brisket in a baking pan and sprinkle heavily with the two salts and garlic powder. Pour a bottle of COLGIN NATURAL LIQUID SMOKE over it and refrigerate overnight. Bake at 250°F for 4 hours. Let it cool in oven. Pour off half of the fatty juices, remove brisket to a cutting board and cut into thin slices. Return sliced brisket to baking pan; add barbecue sauce. Refrigerate. Bake at 250°F for one hour prior to serving.
