Ingredients:
3 lbs catfish fillet
3 teaspoon COLGIN NATURAL MESQUITE LIQUID SMOKE
1 tablespoon butter
salt and pepper to taste

Instructions:
Rub inside and out with COLGIN NATURAL LIQUID SMOKE and salt. Bake 10 to 15 minutes at 550°F. Reduce heat to 425°F. Frequently brush fish with melted butter and the remaining 1 teaspoon of COLGIN NATURAL LIQUID SMOKE while cooking. Cook 30 to 40 minutes according to thickness of fish. Allow 10 minutes for each additional pound.
