COLD ROAST BEEF SALAD WITH DRESSING

Serves 4

Ingredients:
1 and ½ lbs. beef tenderloin roast, cooked
1 (4 oz.) bottle COLGIN NATURAL HICKORY LIQUID SMOKE
2 cups orange juice
¾ cup red currant jelly
1 tablespoon minced fresh ginger
1 tablespoon grated orange peel
1/3 cup olive oil
2 tablespoon red wine vinegar
8 cups mixed salad greens

Instructions:
In a large glass bowl, marinate beef in liquid smoke for 1 hour. Bake in oven at 300°F for 2-3 hours. Remove from oven and cool. This can be made the day before eating. Combine orange juice, jelly, ginger, and grated orange peel in heavy saucepan. Simmer about 15 minutes. Cool. Whisk in oil & vinegar. Mix well. Arrange greens on plates. Using long sharp knife, cut beef into thin slices. Place beef slices on greens. Spoon dressing over & serve immediately.
