QUICK POTATO CASSEROLE

Ingredients:
6 medium potatoes, peeled
4 boiled eggs
1 cup sour cream
1 (10 oz.) can cream of mushroom soup
1/8 teaspoon curry powder
¼ teaspoon COLGIN NATURAL PECAN LIQUID SMOKE
¾ cup Italian bread crumbs
¾ cup grated Monterey Jack cheese
salt and pepper to taste

Instructions:
Cook potatoes in water with salt and pepper. Drain and slice potatoes. Combine the soup, sour cream, liquid smoke, curry powder. Arrange in a casserole dish layer of potatoes, eggs and soup mix. Repeat layers. Top with bread crumbs and cheese. Bake at 359F for 30-40 minutes.
