SMOKED CORNED BEEF AND CABBAGE

serves 6
1 corned beef brisket about 4 lbs.
12 medium carrots, pared and cut into 3 inch pieces
12 small new potatoes
4 small white onions, peeled
1 head cabbage cut into wedges
4 cloves garlic, peeled
1 bay leaf
1 tsp.Colgin Apple Liquid Smoke
salt and pepper to taste.

In large kettle, combine beef, garlic, onions, bay leaf, salt,pepper and liquid smoke. Cover with water and bring to boil. Reduce heat and simmer 3-4 hours or until beef is tender. Remove beef and place in oblong dish, keep warm. Add carrots, potatoes and cabbage to water and bring to boil, simmer on low heat 35-40 minutes or until tender. Slice beef and transfer to platter, place vegetables around beef and serve.
