serves 4
1 lb. boneless, skinless chicken breast
1 tsp. cumin
1 tsp. chopped garlic
1 tsp. paprika
1 white onion, sliced
1 red pepper, sliced thin
1/2 cup salsa, thick and chunky
1 bottle Colgin Lemon Pepper Manaride
In baking dish add chicken and marinade. After 30 minutes remove chicken and slice into strips. Sprinkle with cumin, garlic and paprika. Spray skillet with cooking spray, add chicken and stir-fry until done. Add salsa,onions and red peppers. Simmer on low heat until vegetables are tender. Serve on tortillas or french bread slices or roll up in lettuce leaves
