4 boneless, skinless chicken breast
2 cups fresh mushrooms
1 red onion, sliced
1 15oz. can chopped tomatoes
2 tbsp. tomatoe paste
3 tsp. olive oil
1 cup shredded white cheddar cheese
1 tbsp. sliced jalapenoe peppers
1/4 cup Italian Dressing
1 bottle Colgin Lemon Pepper Marinade
In baking dish, place chicken, add marinade.
Drain after 30 minutes. Grill or bake chicken until done. In skillet heat oil, add onions and mushrooms. Simmer about 5 minutes. Stir in tomatoes, tomato paste, jalapenoe peppers and Italian Dressing. Mix well. Add chicken snd toss to coat, simmer on low heat 5-7 minutes.
Top with cheese, simmer on low heat until cheese has melted.
