CREOLE SHRIMP SALAD

serves 4

3 cups of cooked, peeled shrimp
1/4 cup chopped celery
1/4 cup sliced, green olives
1/4 cup chopped green onions
1 cup chopped tomatoes
3 tbs. mayonnaise
3 tbs. ketchup
1 tbs. olive oil
1 tbs. Tabasco sauce
1/4 tsp. Colgin Worcestershire Sauce
salt and pepper to taste
parsley
lettuce leaves

In sauce pan combine mayonnaise, ketchup, olive oil, worcestershire sauce,salt and pepper. Mix well, simmer on low heat 2-3 minutes. In large bowl combine, shrimp, onions,celery,tomatoes and olives. Mix well.
Pour mayonnaise over shrimp and toss to coat.
Arrange lettuce on salad plates, add shrimp.
Top with parsley.
