ASPARAGUS SALAD

(serves 6)

Ingredients:
1 lb. fresh asparagus
2 or 3 ripe avocados
1 (12oz.) Nature Sweet tomatoes
1 small red onion, sliced thin
1 (6 oz.) Feta Cheese with Basil & Tomato
1/3 cup Italian dressing
1/8 teaspoon COLGIN WORCESTERSHIRE SAUCE
¼ cup lemon juice + 1 cup water

Instructions:
Cut the hard ends off of the asparagus. In large pot filled with water, bring to boil. Add asparagus to water. Cook in boiling water for 3 minutes only. Drain asparagus and place in another pot of ice water for 30 minutes in refrigerator. Drain asparagus and cut into 2-3 pieces. Peel avocados, slice  and place into lemon water. In salad bowl combine asparagus, avocados, onions, and tomatoes. Add the Worcestershire sauce to the dressing. Pour Italian dressing over and toss to lightly coat the vegetables. Add the Feta Cheese and mix well.
