PINEAPPLE PORK TENDERLOIN

serves 4
1 1/2 pork tenderloin
2 tbs. creamy peanut butter
2 cloves garlic, minced
1 tsp. chili powder
1/2 cup pineapple preserves
2 tbs. Colgin Worcestershire Sauce
salt and pepper to taste
cooking spray

Combine worcestershire sauce, peanut butter, chili powder, garlic, salt and pepper in bowl,
mix well. Place tenderloin on baking dish coated with cooking spray. Spread mixture over tenderloin. cover with foil. Bake in oven at 375 degrees for 30-35 minutes. Remove foil and brush meat with pineapple preserves. Bake another 10-12 minutes basting often with preserves. Let stand 5-8 minutes before slicing.
