SPANISH-STYLE EGGS

serves 4

4 eggs
1 medium red onion, sliced
1 green pepper, sliced
4 tomatoes, sliced
6 black olives,slices
6 oz. breakfast sausage
3 tbs. olive oil
1/4 tsp. Colgin Worcestershire Sauce
salt and pepper to taste

In skillet brown sausage with worcestershire sauce, salt and pepper. Simmer on low heat until done. Drain off fat. Add olive oil to a skillet. When the oil is hot add onions and peppers. Cook about 5-7 minutes. Add the tomatoes and olives. Cook 3-5 minutes. Transfer to serving dish, add sausage. Top with poached eggs.
