1 lb. shrimp, peeled and deveined
1 cup white rice
1/2 cup white onion, chopped
1/2 cup celery, chopped
1 cup tomatoes, chopped
1 tsp. garlic powder
1 tsp. curry powder
2 cups chicken broth
1/4 cup cilantro
1/2 cup oive oil
1-2 drops Colgin Worcestershire Sauce
salt and pepper to taste
Saute onions and celery in oil. Simmer for 5 minutes. Add shrimp and simmer 5-7 minutes. Add
tomatoes, broth, curry powder, garlic, worcestershire sauce, salt and pepper, bring to boil. Add rice to baking dish and pour shrimp over rice. Mix well. Top with cilantro.
Bake in oven at 350 degrees for 15-20 minutes or until rice is done.
