EASY RICE SALAD

serves 6

1 cup long-grain brown rice
2 1/4 cups water
1 tbs. olive oil
2 cups sliced zucchini
2 cups spinach, torn
1 cup alfalfa sprouts
1/2 sliced black olives
1/2 cup sliced almonds
1/4 cup Italian Salad dressing
1-2 drops Colgin Worcestershire Sauce
salt and pepper to taste

Cook rice in water with worcestershire sauce,
salt and pepper. Simmer on low heat 30-40 minutes. Remove from heat, let stand for 5-10 minutes. Transfer rice to large bowl, add the remaining ingredients. Mix well.
