BEAN and BACON STEW

serves 6

2 cups lima beans
8 slices bacon
1 cup chopped onion
1 1/2 cups black olives
1 cup sliced carrots
4 garlic pods
1 tsp. thyme
1/2 tsp. Colgin Worcestershire Sauce
salt and pepper to taste
8 cups water
1 cup shredded cheese [optional]

Soak beans over night. Drain water off. Fry or
grill bacon, break into pieces. Transfer all
ingredients to soup pot and add water. Simmer
on low heat 1-2 hours. Spoon into bowl and top
with cheese. [optional]
