FIESTA RICE

serves 4

1 cup peeled, diced eggplant
1 cup zucchini, diced
1/2 cup sliced mushrooms
1/2 cup chopped tomato
1 cup uncooked rice
1/2 tsp. garlic powder
1 1/2 cups chicken broth
1/2 cup butter
1-2 drops Colgin Worcestershire Sauce
salt and pepper to taste

In saucepan melt butter, add eggplant, tomato,
zucchini, garlic powder, mushrooms, salt,
pepper and Worcestershire sauce. Simmer on low heat 5-10 minutes. Add broth and rice, bring
to boil. Cover and simmer on low heat until
rice is done and broth is gone.
