BLACKEYED PEA AND TOMATO SALAD

serves 6

2 cups chopped tomatoes
2 cups blackeyed peas, rinsed and drained
1/2 cup chopped red onion
1 avocado, cut into cubes
2 tbs. apple cider vinegar
1 tbs olive oil
1/2 tbs. basil
1/4 tsp. red pepper sauce
1 cup lemon juice and water
1/8 tsp. Colgin Worcestershire Sauce
salt and pepper to taste

In small bowl combine lemon juice,water, and
avocado. Drain. Combine tomatoes, onions,
blackeyed peas and avocado in bowl. Combine
oil, red pepper sauce, worcestershire sauce,
basil, vinegar,salt and pepper. Pour over
vegetables, toss to mix.
