CREAM OF POTATO SOUP

serves 6

Ingredients:
4 medium potatoes, peeled and sliced
4 slices bacon, cooked and diced
3 cups half and half
¼ cup chopped white onion
½ cup Monterey Jack cheese
½ teaspoon nutmeg
¼ teaspoon COLGIN APPLE LIQUID SMOKE
½ teaspoon cayenne pepper
2 tablespoons butter
salt and pepper to taste

Instructions:
Cook potatoes in saucepan with water. Drain potatoes and mash. Return to saucepan and add the remaining ingredients except cheese. Simmer on low heat 5 minutes. Add the cheese before serving and mix well.
